Pumpkin Spice Overnight Oats
Pumpkin spice is my all time favorite. I am that person who turns into a pumpkin as soon as the first Fall leaf hits the ground. You can catch me racing to Trader Joe’s and Aldi to find all the best pumpkin spice foods that exist. I am not going to lie.. there are definitely some gross combinations out there, but these overnight oats are not one of them!
Overnight oats are a staple in my home because they quick, easy, and nutritious. I love the sweetness of a bowl of delicious oats in the morning.
Ingredients:
1/2 cup oats
1 scoop protein powder
1/4 pumpkin purée
1/4 Greek yogurt
1/2 - 1 cup milk or water
1 tbsp nut butter
Recommended toppings: coconut flakes, chia seeds, sliced almonds, and/or honey.
Instructions:
Add oats, protein powder, pumpkin puree, greek yogurt and nut butter to mason jar or storage container. Cover with milk and stir it desired (recommended). Place in refrigerator overnight. Add toppings of choice in the morning and enjoy!
