Quinoa Side Salad

This quinoa salad is the most delicious side dish that I especially love in the summer. It is a great way to get some colors on your plate that are loaded with fiber and other nutrients. The best part is that you can really make this your own by mixing and matching different vegetables depending on what is in season or what you prefer.

Ingredients:

  • 2 cups of cooked quinoa

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1/2 red onion, chopped

  • 1/2 cup cherry tomatoes, halved

  • 2 tbsp olive oil

  • salt & pepper to taste

Instructions:

Combine all ingredients in a bowl and cover with 2 tbsp of olive oil (this can be reduced to 1 tbsp to lower fat if desired). Stir until well combined and store in refrigerator for up to 7 days.

Other recommended add ins: chopped kale, cucumbers, cooked butternut squash, or cooked sweet potatoes.
